Real Wensleydale Cheese is a natural, wholesome food, free from additives and made from fresh milk drawn from cows grazing on the sweet limestone pastures of Wensleydale, an environmentally sensitive area where the use of chemicals is restricted.
The Wensleydale cheese from Somerdale is made at the Wensleydale Dairy in the Yorkshire village of Hawes, right in the heart of Wensleydale. The dairy started in 1935 and has seen dramatic changes over the last 60 years. The most significant change was in 1992 when Dairy Crest announced the closure of the Dairy. The campaign to keep Wensleydale cheese in the Dales was so strong that a group of the dairy managers purchased the dairy and were able to continue the tradition of cheesemaking in Wensleydale and the Wensleydale Dairy was formed.
Real Wensleydale is firm but not dry and hard. When sliced the surface is slightly uneven and open, not solid and smooth like a processed cheese. As a reward for cutting real Wensleydale, you always get some crumbs - just to give you an appetite! You can eat Wensleydale on its own. It is mild and yet has a full creamy flavour which is quite unique. The cheese goes well with a crisp apple and is traditionally eaten with fruit cake or apple pie. It is often said that apple pie without real Wensleydale cheese is like a kiss without a squeeze!
