Derby is a very close relation to cheddar, but often sold as quite a mild cheese rather than ageing for flavour. One very popular variation on Derby is the addition of sage, which gives a very distinctive green & white mottling. The sage will give a very distinctive flavour to the cheese and makes it ideal to use in pizzas or on omelettes.
